Californians come from all parts of the globe — and we have our fair share of folks from Louisiana. Crawfish are well known in that part of the country, but Californians who discover this great food that looks like a tiny lobster (only it’s more tender) are becoming the crawfish’s biggest fans and consumers. You can actually buy crawfish from California — and Sacramento area boasts the most crawfish restaurants per capita in the state. But for year-round supplies the biggest festivals in California generally get crawfish flown direct from Louisiana.  This weekend food and music festival “Gator by the Bay” in San Diego serves up 10,000 pounds of crawfish straight from Louisiana.
