In recent years I&#8217;ve visited Albertson&#8217;s less and less, opting for places specializing in organic produce, dairy and policies on GMO labeling. \u00a0Apparently I am not alone. The Albertson&#8217;s store was nearly empty last time I looked, but the three Trader Joe&#8217;s stores close-by are always packed. As one store (or door) closes, a new one opens. In recent months I&#8217;ve seen the grand opening of a Gelson&#8217;s, replacing Albertson&#8217;s, a Sprouts replacing Ralph&#8217;s, and several such transformations.\u00a0Economist William W.
