You can shake it, dice it, add salt &amp; pepper, but any way you look at the numbers, there&#8217;s a lot that goes into succeeding in one of the most challenging types of businesses to open, operate and make a profit. That&#8217;s why many California restaurants participate in annual Restaurant Week \/\u00a0Restaurant Month.
