One of the fastest growing food and confection industries is Fine Chocolate. On January 20, 2018 The Fine Chocolate Industry Association’s ELEVATE CHOCOLATE meets in San Francisco for seminars and networking among the who’s who of fine chocolate makers. Fine Chocolate Glossary
Artisan chocolate – produced by knowledgeable chocolate maker
Chocolate liquor – has nothing to do with alcohol, but refers to ground up cocoa nibs
Cocoa nibs – broken pieces of the fermented, dried, and usually roasted cocoa bean
Conching – texture and flavor improvement process
