Vista Resort’s Culinary Gardener

VISTA, CALIF.–  Cal-a-Vie (cal-a-vie.com), an award-winning French Provencal-style luxury destination spa retreat recently established a bee-keeping program under the wings of University of California culinary gardener, Tyler Lockwood, who oversees the property’s flourishing organic gardening efforts, including six colonies of bees.  Lockwood says honey is an integral part of the culinary program, “the collaboration between a farmer, a chef and a dietician. Together, we decide what we will grow for the season, then create dishes and recipes to highlight what is in our garden and deliver the most seasonal, nutritional menu possible.”

He cultivates fresh, seasonal, organic produce and herbs, working directly with Executive Chef Curtis Cooke and Dietician May Tom to propagate heirloom ingredients that are free of harmful pesticides. Although Californians did not vote to pass labeling laws identifying foods containing GMOs, these foods and pesticides used in their production has been eyed as a possible cause of bee colony collapse, a real threat to California’s fruit and vegetable farming.

The culinary program at Cal-a-Vie Health Spa features an edible flower garden, an herbal tea garden and more. Healing food experiences for guests at the 200 acre destination health spa 40 miles north of San Diego are available in three, four and seven night packages.  Here are several similar resorts in California.
