Executive Chef Chris Savage helped launch the Hyatt in Huntington Beach when it opened in 2003 and today, he says that dining has changed considerably. He should know. Healthier meals with less calories are what people seek these days, said Savage, whose focus is local, fresh, and healthy.
"We're seeing a lot more fish being ordered," says Savage. And butter & cream? "No, we're opting for healthier sauces and methods of preparing delicious and complimentary flavors to the meets such as reductions."
