California is the nation's and world's largest producer of many vegetables. Artichokes, carrots, garlic and asparagus are some.
What is a vegetable? Botanists define it as such: Edible parts of plants — stems, leaves and roots — and even the flower bud. Vegetables include celery (stem), lettuce (leaves), cauliflower and broccoli (buds), and beets, carrots and potatoes (roots). Vegetables are less sweet and are served as part of the main dish. Fruit is the part of the plant that develops from a flower and is also the section of the plant that contains the seeds. The following are technically fruits: avocado, beans, peapods, corn kernels, cucumbers, grains, nuts, olives peppers, pumpkin, squash, sunflower seeds and tomatoes.
