Californians Celebrate Cinco de Mayo

May and Margaritas! Ahhhh California! As Cinco de Mayo approaches — the May equivalent to March’s St. Patrick’s Day celebration — nearly every restaurant and bar is stocking up on ample supplies of cocktail mixes, limes, tequila and Mexican beers. California’s population is shifting, according to California Department of Finance’s latest report which projects the state’s Hispanic population will grow from 39% today to 46% by 2060. A plurality of California is Hispanic with 15 million claiming Hispanic ethnicity. While Cinco de Mayo is a celebration of Mexican victory over the French at the Battle of Puebla in on May 5, 1862, it has become popular festival for all Californians who love Mexican food, beverages, dances and music.
