Gluten-Free Food Allergy

Gluten-free is a buzzword in the food industry these days. Gluten is a protein composite found in wheat, which means that you’ll usually consume gluten in breads, pizzas, beer, and even sausages that use gluten fillers or binders.

  • Why gluten-free? It’s estimated than 1% of the American population has celiac disease, in which gluten causes the immune system to attack the intestinal lining of the small intestine. This can lead to osteoporosis, iron-deficiency anemia, extreme fatigue, infertility, neurological problems, and lymphoma of the small intestine in rare instances.
  • Why not gluten-free? Several scientific journals performed studies on gluten-free diets used by healthy adults, and concluded that gluten-free eating shows no added benefits to the gut microbiota and immune function in healthy adult human subjects.
