Pumpkin Bisque

The pumpkin bisque recipes are as vast as your imagination. This particular recipe is easy to fix, and tried & true. It's sure to please as a Fall meal or special course to an elegant dinner (or brunch).

Ingredients

  • 2 cups pumpkin, butternut squash or sweet potato
  • 2 tablespoons olive oil
  • 1 ½ cup white onions, diced
  • 3 ½ cups vegetable stock
  • 5 cloves roasted garlic
  • ¼ cup sherry wine
  • 1 ½ tablespoons maple syrup
  • ½ teaspoon cinnamon
  • ¼ teaspoon cayenne
  • ½ teaspoon sea salt
  • Black pepper, to taste

Garnish with toasted pumpkin seeds  or pumpkin seed oil if you like. Other festive garnishes include a green sprig, or white swirl or drizzle of thinned sour cream or thinned, non-flavored yogurt.
