Chef Paul Gauweiler, whose pastries have been enjoyed around the world, is celebrating his 45th Anniversary at The Cake Box in Huntington Beach, Calif.

The jovial, hard-working 80-year-old, who earned his Master Pastry Degree at 24 in Germany, still works 12 hours a day, 6 days a week, creating masterpieces, such as his Baumkuchen (long, spiral tree cakes with 8 to 20 layers baked over gas-fired flames). He ships them all over the country and world.

The New Yorker, Los Angeles Times, Orange County Register and KTLA-TV have featured the Hannover native’s international culinary excellence, which he developed in his native Germany and France.

While he was a Pastry Chef in France, the woman, who would become his wife, Irene, was a chef preparing salads in the same hotel. The native of Argentina helps Paul, as does his son, Eric (who labors all night preparing baked goods); grandson, Brandon; friend, Vance Goodman (deliveryman for 20 years) and Laura Jimenez, a superb cake decorator, who has worked there for over 5 years.

“One of the best things to ever happen to us was hiring Laura, who takes cake decorating classes at Orange Coast College,” said the elder cake statesman, a former head pastry chef at Harvey’s Lake Tahoe, and at the Disneyland Hotel. “She’s top notch just like my wife, son and grandson.”

While he was at Mickey Mouse’s favorite hotel, where he created pastries for many celebrities like Lionel Hampton, he happened to read about a bakery for sale at Springdale and Warner in Huntington Beach.

He leased the facility and has been creating pastries for happy customers ever since. Chef David of American Idol Fame has hired Paul for years, and other clients have been Disneyland’s Club 33, The Anaheim Ducks, Olympic Gold Medal Diver Sammy Lee, Hollywood Actor/Screenwriter Howard George, Harbor House Restaurants and others all around the country and around the world.

He occasionally gets tips but one elated customer blew him away recently. “She asked me if I’d seen the spectacular production, Shen Yun. I said I couldn’t afford it. The next day she handed me an envelope with two $100 bills in it to go see the production. She said the Lord told her to do it!”

The humble baker said the worst thing to happen was long ago when he was making a wedding cake. “I forgot to put sugar in the strawberry filling, so I added a scoop of salt, thinking it was sugar. Normally I taste what I’m preparing but didn’t this time. It wasn’t funny then but I can laugh about it now.”

For many years, Paul baked cakes at cost that were shipped to our troops in Afghanistan and Iraq. His good deeds were featured in television news shows all over.

The funniest thing to happen to me in The Cake Box was when an elderly German lady came in and I was showing her Paul’s great cookies and cakes. She turned to me and said, “You are the Propaganda Minister!”
